Maxime Caillon, after two years working alongside MOF Franck Deperier in his hometown in France, moved to England to develop his carreer. There, he had the opportunity to work in renowned establishments such as Harrods, TWG, and the hotel industry. He became Head Baker at the 5-star Hotel Café Royal in London, where he started working with Moulins Viron flour. After three and a half years in this role, he was given the opportunity to open the Lenôtre school in Thailand as a Chef Baker Instructor. He then transitioned to Head Baker at the prestigious Mandarin Oriental Bangkok, where he continued to share his passion and expertise with his team. During this last year, he finally became Moulins Viron Ambassador to highlight the French craftmanship around the world.
