Nicolas Lambert is the Senior Executive Pastry Chef overseeing both Four Seasons Hotels in Dubai relocating in 2021 from St. Petersburg. Raised in Épinal, France, he grew up in his parents’ bakery, beginning pastry-making at just two years old and starting his career as an apprentice at age 15 under Philippe Torti. He honed his craft across prestigious French cities—Nancy, Lyon (where he became the youngest winner of the Festival National de Croquembouches), Paris (Plaza Athénée under Christophe Michalak), and Cannes (as sous-chef under World Pastry Champion Jérôme de Oliveira)—before embarking on an international journey to Hong Kong and beyond.
