Sébastien Bouillet, born in Lyon in 1976, took over the family pâtisserie-chocolaterie founded by his parents in Lyon’s Croix-Rousse in 2000. Trained with several Meilleurs Ouvriers de France and recognized for his bold, elegant creations, he’s become a member of Relais Desserts International and expanded his presence to Japan with shops in Tokyo and Osaka since 2007.
