OVER 30 YEARS OF CAVIAR CRAFTSMANSHIP Our farm originated in the heart of Calvisano (BS) in the early ‘90s, when Carlo Dalla Rosa, a graduate in Livestock Production Science and specialized in fish farming, decided to transform a former trout farm into a sturgeon farm — becoming one of the first visionaries to refine the production of sturgeon in captivity. Since 1997, the Acipenser Srl breeding farm, populated exclusively by sturgeon, has been dedicated to this mission. The first caviar extraction took place in 2005, after a decades-long production cycle conducted in a natural and sustainable manner. In 2011, the Royal Food brand was founded by Nancy D’Aiuto, who set out to promote and market this high-quality caviar as an exclusive Italian product — carefully selected from the annual production of 9 to 13 tons. ORGANIC FARMING Our state-of-the-art Acipenser 4.0 farm features 80 outdoor tanks and 75 indoor tanks, covering a 10-hectare area over 1 kilometer in length. It houses both native and Caspian Sea sturgeon species. The facility benefits from a generous water supply (up to 2000 L/sec), allowing for a complete tank water renewal every 4 to 6 hours — a key factor in ensuring our caviar has no unpleasant aftertaste. This farming method offers numerous advantages: constant fish monitoring, tank hygiene, cleaner water, disease prevention, natural management of the thermo-photoperiod, and efficient feed distribution with minimal waste. FROM STURGEON TO CAVIAR PEARLS Our production system is fully integrated: sturgeon are born and live their entire lives on the farm — from spawning, to the larval stage, to mature females. From November to April, sturgeon at the final stage of development are transferred to a specialized facility, where they are processed using artisanal techniques. This includes roe extraction, salting with the traditional Malossol method (using only a small amount of salt), and initial packaging. Once the caviar reaches optimal maturity, it is ready to be enjoyed — a natural multivitamin, rich in protein and low in calories. Each variety of caviar differs in persistence, intensity, grain size, and texture, offering unique tasting experiences to suit every palate.
